Sophie Valrose Cabernet Sauvignon

Gravel deposits and schist.

The Cabernet Sauvignon comes from gravel and schist soils that drain freely and warm quickly, naturally limiting vigour and concentrating the fruit. These conditions favour smaller berries, firmer tannins and a structured expression well suited to the variety.

The grapes are harvested at full maturity and carefully sorted before de-stemming and crushing. Fermentation and maceration last between 12 and 20 days, with controlled temperatures and regular aeration to manage tannin development and support varietal expression. A portion of the wine is matured in French oak before light fining, bottling and several months of bottle ageing prior to release.

This Cabernet Sauvignon shows ripe cherry, blackcurrant and raspberry on the nose and palate. Fine, well-integrated tannins give a soft, balanced texture, with subtle notes of cocoa and warm spice leading to a long, fruit-driven finish.

A natural match for grilled or roasted red meats, lamb, and hearty vegetable dishes, as well as mature hard cheeses.

THE LEGEND OF SOPHIE VALROSE

At the turn of the last century, women were often relegated to the back-breaking and unpleasant labour in the vineyards, while being paid significantly less than their male counterparts.

This best-selling range embodies the legend of Sophie Valrose; symbolising the fight that women undertook to be recognised for their dedication to the wine industry, which would not have flourished without their efforts.
