We are very pleased to announce the release of the 2022 Eminence de Bijou Rose. We carefully crafted this wine with fine-dining in mind encouraging tannins and balanced acidity, resulting in a gastronomic rose capable of withstanding food flavour attack!
Following the interest in this wine we took the decision to also make a red and a white to complement the rose. The red is an exceptional blend from AOP Languedoc Saint-Saturnin, a tiny appellation of only 230ht. The white is an outstanding Chardonnay sourced from the idyllic vineyards of Coteaux de Beziers. Most of the fruit came from the cooler, higher slopes.
These wines were greeted with favourable comments at Wine Paris and we have since shown them at trade fairs in Milan and Istanbul. Next stop Dusseldorf for Prowein.
Alongside the success that Le Bijou de Sophie Valrose Rose has enjoyed in Waitrose & Partners, they have secured a significant quantity of the Eminence de Bijou rose. This launches in their stores Monday 20th March 2023.

All our grapes are sourced from HEV or organic vineyards.
Eminence de Bijou rose, IGP Coteaux de Beziers 2022
Viticulture :
– 2 Selected parcels of low-yielding vines located between the River Orb and the Bassin de Thau
– Plots on gentle north-facing slopes
– Calcareous clay-limestone soils
Vinification and blending :
– Heavier pressing
– Slightly warmer vinification than usual (16C)
– A small part is barrel fermented, a larger part is fermented on stave, about a third of the blend is from stainless still
– Wine left on its fine lees for 10 days post fermentation for flavour and freshness
– Blend of Grenache, Cinsault and Rolle
Eminence de Bijou red, AOP Languedoc Saint Saturnin 2020 – 2021
Viticulture :
– Foothills of the Larzac, warm Mediterranean climate
– Poor calcareous clay soil
– Coolig breez for longer ripening
– Low yielding bushvines
– Yiels 35-40 HL/Ha
Vinification and blending :
– Hand harvested grapes
– Pumping over and pushing down techniques twice a day to extract optimum amount of flavour
– Blend ages in concrete tanks for min 18 months
– Blend of Grenache, Syrah Mourvedre
Eminence de Bijou white , IGP Coteaux de Beziers 2022
Viticulture :
– Selected Chardonnay parcels between river Orb and the basin de Thau
Vinification and blending :
– No skin contact
– Malolactic fermentation for 20% of the wine
– Fermented on gently toasted staves and blended parcels from stainless still.
