60% Grenache, 35% Cinsault, 5% Rolle – IGP Coteaux de Béziers
Éminence is a complex and layered wine. The Grenache brings flavours of raspberry and redcurrant accompanied by notes of zesty citrus from the Rolle. The palate develops with emerging notes of vanilla and spice from the oak influence that lingers on the finish.
Vinification and Viticulture
We have sourced the grapes from 2 selected parcels of low-yielding vines located between the river Orb and the Bassin de Thau; only a mere stone’s throw from the Mediterranean Coast where the cooling maritime influence plays an essential part in the steady ripening of the grapes. The plots are on gentle north-facing slopes and the calcareous clay-limestone soils lend themselves perfectly to this unique project.
We harvest early in the morning to retain freshness and gently press to avoid extracting unripe flavours. The majority of the grapes undergo temperature controlled fermentations (16°C). We have also partially oak fermented some of the Grenache (circa 30%) to provide depth and structure to our blend as well as a new flavour dimension. In addition to this, we decided to leave the wines on their fine lees for 10 days post fermentation to enhance the creamy texture. Éminence de Bijou is a serious, elegant and complex rosé that is pairs excellently with food and will evolve in the bottle.
