Vestige de Bijou Pinot Noir

Alluvial-clay soils.

Produced with grapes nurtured by the convergence of Mediterranean and Atlantic climates, and influenced by a rich tapestry of diverse soils, these wines embody a refined, contemporary interpretation of their ancestral roots. The cool, humid climate of la Haute Vallée de L’Aude enables each of our grape varieties to ripen slowly, and adds freshness and finesse.

Monitoring the maturity of the grapes (berry analysis and tasting) determines the ideal harvest date for achieving the right balance between aromatic expression and polyphenol ripeness.

The grapes are harvested by hand in small crates. Whole bunch fermentation and maceration for 20 days in open vats with gentle punching down twice a day. Matured in new oak barrels for 6 months.

“A lovely mix of cherry, plum, raspberry and wild strawberry – classic Pinot character with youthful vibrancy. Ripe yet pure, neither jammy nor baked. Subtle oak adds depth without overpowering, while fine, grippy tannins provide structure and refreshment. The palate lingers beautifully, revealing hints of vanilla pod, cream and finely toasty nuances. A touch of struck match leads into a gently smoky finish.”

Perfect with roast duck or lamb, where the wine’s cherry and plum notes mirror the richness of the meat, or with herb-roasted chicken and wild mushrooms to highlight its subtle smoky edge. Its purity of fruit also flatters grilled salmon or tuna, while creamy cheeses like Brie or Chaource echo the wine’s silky, vanilla-kissed finish. Elegant yet gastronomic, it shines with dishes that balance depth and freshness.
