Clay-limestone. The Mediterranean influence and silty-clay molasse soils bring fruit and power.
A selection of the finest vineyard plots, each shaped by distinct climatic influences and terroirs.
Low yield vineyards, high density of 5,000 vines/ha which enables us to control vigor.
To the west, a vineyard influenced by an oceanic climate, planted on clay-limestone terraces, contributes elegance.
To the northeast, the Mediterranean influence and silty-clay molasse soils bring fruit and power.
To the south, the cool, humid climate of la Haute Vallée de L’Aude enables each of our grape varieties to ripen slowly, and adds freshness and finesse.
All the grapes are handpicked and sorted on a conveyor belt so that only the best grapes are pressed. The must is then transferred to French oak barrels for fermentation. Partial Malolactic fermentation is carried out. The lees are stirred daily. It will then be matured in barrels for 8 to 9 months.

The finely integrated oak adds depth – more toasty than buttery – complementing the ripe, intense Chardonnay fruit. Hazelnut emerges first, followed by a subtle hint of peanut. Pairs beautifully with shellfish, fish, and foie gras, as well as cheeses that favor white wines over red, such as aged goat cheese, vieux Cantal, or brebis from the Pyrenees.
