Sophie Valrose Pinot Noir
Limestone and gravelly soils
The vineyards surround the town of Limoux, which is considered the meeting point between the the oceanic influence from the west and and the Mediterranean from the east. In addition, the vines benefit from the Pyrenean climate, where some of the vines are located almost 500m above sea level. The cool climate and wider diurnal range results in a longer growing season, allowing the grapes to fully ripen.
Carefully selected hand-harvested grapes are destemmed and gently crushed. They are then fermented in stainless steel vats for 18-20 days and aged on fine lees at low temperature in stainless steel tank.
Vibrant and crisp on the palate, with a lively acidity that intensifies the fruit flavours. Its light and refreshing nature is accompanied by a smooth, silky texture.
A perfect wine for roasted poultry and salmon; lamb stew served with roasted vegetables; mushroom risotto; charcuterie and cheese board; pâté or terrine, and so much more.
“An appealing Pinot with scents of cherry and cranberry, and a light, bright mouthfeel featuring flavours of crushed strawberry and a touch of raspberry jam, followed by a hint of crunchy cranberry to bring a fresh note to the finish. While this is quite a delicate wine, it’s far from thin, and there is some soft, fleshy fruit along with some fine, dry, chalky tannin. An excellent example of finely-structured, fruity Pinot.”
