30% Grenache Noir, 30% Syrah, 20% Cabernet Sauvignon and 20% Merlot
Le Cabaret is elegantly pale with subtle notes of fresh fruit with citrus tones supported by a good structure. Pairs well with grilled meat and garlic roasted vegetables.
Viticulture and Vinification
Le Cabaret comes from Cabardès AOC, 10km north of Carcassone. The grapes are directly pressed before fermentation in thermo-regulated stainless steel vats. It undergoes 36 hours of maceration to achieve the beautiful pale pink softness of the wine. The wines are then left for 5 to 10 months in vats before bottling to develop complex flavours and aromas.
